Our olive groves, situated in the hilly areas of Colcimino and Madonna delle Grazie, at an altitude of about 400 metres, are totally exposed to the sun for the entire day and they produce high-quality olives that are hand picked and worked immediately with millstones (using cold extraction methods), to give an excellent quality very refined oil with a fruity flavour. This oil is optimum when used for dressing and moreover maintains its characteristics even after cooking, giving the dish often forgotten flavours.
