Coming from the typical local Apulian olive, this oil is characterised by a concentrated fruity and great feature, it has got a variegated and elaborate flavour with a typical fruity of fresh smells like just cut down grass, artichocke and green tomato. In addition ,it has got a well-proportioned bitter and incomparable spicy taste. It is well combined with fish and meat tartare, legumes soup, bread-dipping, pizza,fresh cheese (burrata,mozzarella,ricotta and stracciatella), grilled meat and fish, grilled vegetables. It has got a very low sour and a very high polyphenol content.
