Our De Robertis CHIAROSCURO Extra Virgin olive oil is made from the highest quality, carefully selected, coratina olives from our family estate producing the highest quality extra virgin olive oil. CHIAROSCURO EVOO is characterized by a very low acidity degree and very high polyphenol concentration value. Total Polyphenols  >700 mg/kg means high antioxidants (2019 Harvest)!
Olives are placed into bins and the olives are milled within 6 hours of harvesting with a two cycle Mori Tem extraction machine with a temperature under 23° C. thanks to the most advanced extraction and preservation techniques.
Pairings:
Perfect with our traditional dishes for those with a modern palate. Ideal on bruschetta with tomatoes, tuna carpaccio, swordfish, salads, grilled radicchio, lentil soups, risotto with porcini mushrooms, boiled octopus, stewed lamb, meats and medium cheeses.

De Robertis “CHIAROSCURO” EVOO is a wide and embracing extra virgin olive oil with a limpid golden yellow colour with slight green hues. Its aroma is full and rotund, hints of artichokes and wild chicory, together with distinct fragrant notes of mint and rosemary. Its taste is fine and strong, with a flavour of lettuce and a definite note of almond and white pepper.
We have bottle sizes from 100 ml to 500 ml with anti-refill caps to prevent tampering with the EVO inside.
