Since 1979, the Consortium for the Protection of Asiago Cheese guarantees that only cheese that respects the production procedure can be called, recognised and sold as Asiago, handing down its tradition and strengthening its identity. The Asiago PDO supply chain comprises 1,595 dairy farms, 43 production companies and 5 maturing companies (data for 2016), which each year process more than 2,200,000 tonnes of milk.
