The Taleggio Protection Consortium was established in 1979, nine years before the formal recognition of the Protected Designation of Origin (P.D.O.).
Today the membership is composed of dairies, maturers and milk producers, as well as more than 80 companies that adhere as brand users.
Taleggio is therefore one of the Italian cheeses whose peculiar characteristics are protected by the European Union, and this is why the supply of milk, production and aging must take place exclusively in the area indicated by Italian and EU legislation.
