Subjected to a long ageing process (18 months minimum), the thighs selected for these hams have a perfect balance between fat and lean, a strong scent and an unmistakable taste. The cleaning phase is performed manually, eliminating excess lard and rind. Once the bone has been removed, the thigh is pressed to give the slice a more regular and consistent appearance.
