Manual harvesting. First fermentation in steel tanks. Second fermentation in the bottle with a long rest on the yeast for at least 40 months. Shiny straw yellow colour with an elegant and thin “perlage”. Crispy, with bakery notes, white fruits and citrus. Fresh and sapid, creamy and persistent.
