This reduction is obtained in a traditional way, over a low heat from the Pedro Ximénez wine from the Montilla-Moriles area. It is made in a closed concentrator so that no aroma is lost, giving the final product the same aroma that the Pedro Ximénez wine has.
Sensory characteristics (tasting note):
The reduction of Pedro Ximénez wine is at sight very dark mahogany color, to the nose is characteristic of raisins and soft nuances, is extraordinarily aromatic, persistent and smooth and with a sweet and velvety taste.

As a pairing is recommended for use with grilled foie gras, meat, ice cream, fresh cheese, salads.
