GOLD VINAVIN Award at the International Vinegar Contest in 2020
Vinegar of very high quality due to the time spent in American oak casks, for more than 6 years, that is why it is classified as a great reserve, reaching an age of more than 50 years, made by following the oxidative method of fermentation and with subsequent aging in American oak casks, protected by the "Montilla-Moriles" PDO, using fragrant wines to obtain it, exclusive to the area where the winery is located, in the heart of the Montilla-Moriles PDO.
Sensory characteristics (tasting note):
Very intense mahogany color, acquired during its aging in wood, clean and bright. In the olfactory tasting notes it is clean, sharp and penetrating, where some characteristic touches of aging in American oak stand out. It is vinegar with a dry, intense, mellow and balanced flavor reminiscent of Oloroso wine, with an exquisite and smooth aftertaste that gives it an exclusive character and personality.
Marinate:
As a pairing it is perfect in salads, Gazpachos and Salmorejos.
