It is high quality vinegar made following the oxidative method of fermentation and with subsequent aging in American oak casks, protected by the DOP "Montilla-Moriles", using fragrant wines to obtain it, exclusive to the area where the winery is located, in the heart of the Montilla-Moriles DOP.
Sensory characteristics (tasting note):
Mahogany color with amber tones, acquired during its aging in wood, to the clean and penetrating nose, where some characteristic touches of aging in American oak stand out. It is a vinegar with a dry, intense and balanced flavor reminiscent of Oloroso wine, with an exquisite and smooth aftertaste that gives it an exclusive character and personality.
