Vinification: The grapes are crushed and pressed softly; the must is cooled to 10°C and left to settle for 24 hours. Passages in small oak barrels
Secondary fermentation: Fermentation in the bottle, according to the classical method, with a stop on the lees for 24 months at low temperature
Color: Intense straw yellow
Perlage: Fine and persistent over the time
Bouquet: Large and fragrant aroma, with hints of bread crust and ripe fruit
Taste: Harmonious and lively taste, with bubbles nicely integrated into a dry finish; hints of spices in the aftertaste
Pairing: Excellent aperitif; it is surprising in combinations with all meals like raw seafood, risotto and fish soup
