It is advisable to decant the wine at least 1 hour before consumption and let it breathe
Vinification: the fresh must is transferred from a hopper to stainless steel fermenters at a controlled
temperature where it remains in contact with the skins until the end of the first fermentation (30 days) during
which the cap is daily wet by pumping over. At the end of the primary fermentation, the wine is separated from
the skins and after crushing with a soft press it is put back into stainless steel barrels in which it remains until
the completion of the malolactic fermentation
Appearance: bright ruby color, has fruity aromas, distinctly of cherry, black cherry, violet and berries with spicy
aromas of cinnamon and vanilla. A wine of great structure, rightly tannic, on the palate it is characterized by
notes of plum and black cherry
Gastronomic pairing: Spicy salami, semi-mature cheeses, first courses with meat and vegetable sauces, grilled
or stewed red meats, braised meats, game feathers
