Pancetta “steccata” dolce – linea “Valle dei Trulli”

Obtained from the belly of the Italian heavy pig, the processing of the       Pancetta "steccata"  involves dry salting, with massage and drying, then folding on itself and binding by hand. Inserted in the natural casing and tightened between two oak boards to shape it and seasoned for over 120 days. Excellent for mixed cutting boards and tasted on hot bread, it also enriches low-fat meats.
