For over 150 years, the Simona olive tree has been growing only in the territories of Conversano in Puglia (South-East Italy), where our plant is located. The Simona olive shows a particularly high resistance to fly attack: the bouquet of unpleasant scents produced by the pulp and spread out by the skin shields the olive from fly attacks.
Medium fruity with herbaceous notes of green olives, turnip tops and artichokes, the medium-high content of total polyphenols gives it pleasantly bitter taste with a fruity note of green olives turning color.
