El Bucarito cheese factory is the project of Carlos and Yolanda who, taking advantage of the quality of the milk from the goats of their farm's large fields in Rota (Cádiz), decided to develop a series of innovative cheese recipes that somehow depart from tradition and allow them to explore the potential of raw milk.
