E.T. Formaggi produces and distributes Pecorini in the northwest part of Sardinia Island since 4th family generations. The dairy is located in a territory ideal for sheep’s farming, indeed the abundance of green hills makes it great for the sheep to feed naturally among the pastures. Another important aspect is the climate, perfect weather conditions that create the right environment for the autochthone Sardinian sheep breed.
Cossu's selection of cheese vary from sophisticated production techniques, culturing processes and aging periods according to the tradition, to preserve the originality and high standards of quality. The crafting and packing are artisanal made, they differ according to the format and size.
There are 3 DOP's cheeses: Pecorino Romano, Pecorino Sardo and Fiore Sardo.
