Gapes varieties: Passerina and Pecorino
Harwest: End of October, middle of November
Vinification: Overripe grapes are harvested and put into large perforated crates. They are stowed in the refrigerator for 45 days
until completion of the process of natural drying. During the harvesting the best grapes are brought to the winery, crushed and pressed softly
Aging: In oak barrels 3rd and 4th passage
Color: Yellow tending to amber
Bouquet: Intense and ripe aroma, with notes of candied fruit, dates and nuts
Taste: Full bodied wine, intense sweet taste but well balanced by the natural acidity; final fruity aftertaste
Pairing: Excellent with desserts, with mature cheeses or blue cheeses
